Tasty Tuesday: A Different Slice of Carrot Cake

I have had a hankering for carrot cake ever since I chopped up the carrots for our puppy's birthday cake in my new food processor. According to the World Carrot Museum (yes, that's a real thing!) the origins of carrot cake are a bit of a food history mystery, but it likely evolved from medieval times when carrots were used as a more readily-available sweetener than other alternatives of the day. I really enjoy a great traditional carrot cake with oh-so-naughty cream cheese icing; however, I decided to go in search of some interesting carrot-cake inspired alternatives for this week's Tasty Tuesday:
